Mais avant de vous expliquer les différents niveaux de torréfaction, expliquons ce qu'est le craquement.
Le craquement du grain de café, souvent appelé "crack", est un phénomène clé lors de la torréfaction du café. Il se produit lorsque les grains, chauffés à des températures élevées, subissent une expansion rapide due à la libération de vapeur d'eau et de gaz internes. Ce processus se déroule en deux phases principales :
- Premier Craquement (First Crack) : Il survient généralement à une température d'environ 196°C. C'est un moment crucial où les grains commencent à se transformer en café torréfié. Le premier craquement ressemble au bruit du maïs qui éclate et marque le début de la "buvabilité" du café. À ce stade, les grains deviennent plus clairs et plus légers, et le profil aromatique commence à se développer.
- Deuxième Craquement (Second Crack) : Se produisant à des températures plus élevées, autour de 224°C, ce craquement indique que les grains entrent dans une torréfaction plus foncée.
